Basket weaving was one of Adyghe oldest crafts. Circassian craftswomen used cattail, osier, hazelnut shoots, willow rods and straw to make various household items, from mats to baskets like this one. 
 
It is impossible to make true Adyghe cheese without this kind of wicker baskets. Adyghe cheese is made from milk which is heated once to a very high temperature, 950 °C. During this process it is decontaminated which significantly extends its preservation time.

After that milk whey is added to the milk before it has cooled off. Whey is a liquid obtained from straining coagulated milk. Very quickly, within a few minutes, the whey curdles the milk and the resulting mass is put into the basket. It is the wicker walls of the basket that create a familiar pattern on the Adyghe cheese head. When all the liquid has dripped from it, the cheese is turned over and salt is sprinkled on it.

Making Adyghe cheese, from the first to the last step, takes only a few hours. Unlike many other cheeses, it does not have to ‘ripen’, and can be consumed practically immediately.
If made correctly, the cheese needs to be elastic and soft inside. It has a tender milky taste without any unpleasant flavour, if only with a dash of sourness.

100 grams of Adyghe cheese contains about 240 kilocalories. For the sake of comparison, equal amount of Camembert, Edam or Feta will have over 300 grams. Therefore, even athletes who have to stick to strict diets may indulge in it, if in moderation. 
 
Experts have estimated that only 80 grams of Adyghe cheese may provide a daily norm of beneficial amino acids. A slice like that will cover half the daily requirement for calcium, sodium, and the B group vitamins. It also contains substances beneficial to good performance of the nervous system reducing the level of stress and normalising sleep. 
 
Doctors note that Adyghe cheese is easily digestable and beneficial to digestion in general. It is good to practically everybody – children, new mothers, and even people with high blood pressure who are usually advised against salty and fatty foodstuffs.
